Rooibos tea is made using leaves from a shrub called "Aspalathus linearis" which is a type of leguminous plant. The shape of leaves is needle. Leguminous conifer is very unique worldwide. It is usually grown in a small mountains area called Cederberg in the region of the Western Cape province of South Africa. The soil in the area is rich in minerals from ancient seawater. Traditionally, rooibos is creatd by fermenting leaves. The color of leaves turns to red-brown due to fermentationl. Compared to black tea and green tea, rooibos tea has low tannin levels. Because of the low level of tannnin, the taste of rooibos tea is very smooth and not astringent. Additionally, rooibos tea is free from caffeine.
